New England “Chick’n” Corn Chowder


  • 3 Tbsp. soy margarine
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1 Jalapeno pepper, seeded and minced
  • 2 Tbsp. flour
  • 3 cups plain soymilk
  • 1 package Lightlife Smart Menu Chick’n Strips
  • 1 1/2 cups frozen corn kernels
  • 1 tsp. fresh thyme, chopped (or 1/4 tsp. dried)
  • 1/4 tsp. cayenne pepper
  • 1 Package Lightlife Smart Bacon, baked or pan-fried until crisp, crumbled


  1. Melt soy margarine in a large Dutch oven, over medium heat.
  2. Add onion, celery and jalapeno; cook for a few minutes, until tender, stirring frequently.
  3. Add flour, cook one minute, stirring constantly.
  4. Slowly stir in soymilk and remaining ingredients, except the Smart Bacon.
  5. Bring to a boil and cook until think, about five minutes.
  6. Serve hot with Smart Bacon crumbled on top.
