Tomato Butternut Soup


  • 1 medium butternut squash, peeled and diced
  • 2 cups EDEN Edensoy Original
  • 2 cans (14.5 oz.) EDEN Organic Diced Tomatoes
  • 1 tsp. EDEN Sea Salt, to taste
  • 1 Tbsp. fresh ginger, optional


  1. Place small pieces of squash in saucepan with Edensoy. Simmer until squash is soft.
  2. Add 1 can tomatoes, puree with squash. Add another can of tomatoes, leaving in chunks.
  3. Heat, add salt and ginger. Garnish with croutons and green onions and serve. Delicious and easy.
