Tofu Meatloaf

Ingredients:

  • 1 ½ pkgs Nasoya® Firm Tofu
  • 1/2 lb 85% lean ground beef
  • 1/4 cup dry bread crumbs
  • 1.5 oz packet meatloaf seasoning mix
  • 1 egg white
  • Topping:
  • 1/3 cup ketchup
  • 2 Tbsp brown sugar
  • 1 Tbsp prepared mustard

Directions:

  1. To Press: Place the tofu between two paper towels and place on a plate.  Press the tofu by using a couple heavy cans, book, or pan for about 20 minutes
  2. Preheat oven to 375ºF. Add the tofu to a food processor and blend until smooth.
  3. Transfer to a large bowl and add the beef, bread crumbs, seasoning mix, and egg white.
  4. Mix well and shape into a loaf. Place in a lightly oiled 9×5-inch loaf pan.
  5. Mix the topping ingredients together and spread on the loaf.
  6. Bake for 1 hour. Enjoy!
